The sauce is the next key ingredient. A good sauce should be fresh and rich with tomato, garlic, olive oil, salt and a hint of basil. It should enhance your toppings but not overwhelm them. Let it simmer away on a low heat and reduce to a puree-like consistency. The flavours will intensify and balance out with low and slow cooking.
